Easy Beef Instant Pot Chili

Ingredients

  • 1 lb ground beef

  • 1 medium onion, diced

  • 3 cloves garlic, minced

  • 1 bell pepper, diced (optional)

  • 1 can (15 oz) kidney beans, drained and rinsed

  • 1 can (15 oz) black beans, drained and rinsed

  • 1 can (15 oz) diced tomatoes

  • 1 can (6 oz) tomato paste

  • 1 cup beef broth or water

  • 2 tbsp chili powder

  • 1 tsp cumin

  • 1 tsp paprika

  • ½ tsp cayenne pepper (optional, for heat)

  • ½ tsp black pepper

  • 1 tsp salt (adjust to taste)

  • ½ tsp oregano

Optional Toppings

  • Shredded cheese

  • Sour cream or Greek yogurt

  • Chopped green onions

  • Fresh cilantro


Instructions

  1. Set the Instant Pot to sauté mode.
    Add the ground beef and cook until browned, breaking it up with a spatula. Drain excess fat if desired.

  2. Add onions, garlic, and bell pepper.
    Sauté for 2–3 minutes until softened.

  3. Add spices.
    Stir in chili powder, cumin, paprika, cayenne, black pepper, salt, and oregano. Cook 1 minute to bloom the spices.

  4. Add remaining ingredients.
    Stir in diced tomatoes, tomato paste, beans, and beef broth. Mix well.

  5. Pressure cook.
    Seal the Instant Pot lid and set to Manual/Pressure Cook for 10 minutes.

  6. Quick release.
    Carefully release pressure when the cooking cycle is complete.

  7. Optional thickening.
    If you prefer thicker chili, set Instant Pot back to sauté mode and simmer for 5–10 minutes.

  8. Serve warm with your favorite toppings.
