Why I Love Making Chicken Noodle Soup in the Instant Pot

  • Fast & easy: Dinner is ready in about 30 minutes.

  • Hands-off cooking: No need to constantly stir or babysit the pot.

  • Full of flavor: Pressure cooking locks in all the delicious savory flavors of chicken and veggies.

  • Perfect for leftovers: Soup tastes even better the next day!

Ingredients

  • 2 tablespoons olive oil

  • 1 small onion, diced

  • 2 carrots, sliced

  • 2 celery stalks, sliced

  • 3 cloves garlic, minced

  • 6 cups chicken broth

  • 2 cups cooked shredded chicken (rotisserie works well!)

  • 1 teaspoon dried thyme

  • 1 teaspoon dried parsley

  • Salt and pepper, to taste

  • 2 cups egg noodles

  • Optional garnish: fresh parsley, grated Parmesan

Instructions

1. Sauté the Veggies

Set the Instant Pot to sauté mode. Heat olive oil, then cook onion, carrots, and celery for 3–4 minutes until softened. Add garlic and cook 30 seconds.

2. Add Broth & Chicken

Pour in chicken broth, shredded chicken, thyme, parsley, salt, and pepper. Stir to combine.

3. Pressure Cook

Close the lid and set to Manual / Pressure Cook on high for 5 minutes. Quick release when done.

4. Add Noodles

Switch back to sauté mode. Stir in egg noodles and cook 3–5 minutes until tender. Taste and adjust seasoning.

5. Serve & Enjoy

Ladle soup into bowls and garnish with fresh parsley or Parmesan. Cozy comfort in every spoonful!

Tips for the Perfect Soup

  • Use rotisserie chicken to save time.

  • Don’t overcook the noodles — they cook quickly in the hot soup.

  • Customize: Add frozen peas, corn, or a squeeze of lemon for extra brightness.

  • Freeze leftovers in individual portions for quick lunches or easy dinners.

Chicken noodle soup is a classic for a reason — it’s simple, comforting, and nourishing. The Instant Pot makes it even easier to have a homemade version on the table any night of the week.
