Ingredients You’ll Need

  • 2 tablespoons butter

  • 1 small onion, diced

  • 2 carrots, diced

  • 1 teaspoon Italian seasoning

  • 2 cups cooked shredded chicken (rotisserie works perfectly!)

  • 1 cup heavy cream

  • 1 (16 oz) package potato gnocchi

  • 2 cups fresh spinach

  • Salt & pepper to taste

  • Grated Parmesan for garnish


How to Make It

1. Sauté the Veggies

Turn your Instant Pot to sauté mode. Melt the butter and cook onion, carrots, and celery for 3–4 minutes until soft. Add garlic and cook for another 30 seconds.

2. Add Broth & Chicken

Pour in the chicken broth and stir in Italian seasoning and shredded chicken.

3. Pressure Cook

Close the lid and set your Instant Pot to Manual / Pressure Cook on high for 5 minutes. Quick release when done.

4. Add Gnocchi & Cream

Switch back to sauté mode. Stir in the gnocchi and cook 2–3 minutes until tender. Add heavy cream and spinach, stirring until the spinach wilts.

5. Season & Serve

Taste and adjust salt & pepper. Serve with grated Parmesan and enjoy your cozy, restaurant-style soup at home!


Tips for the Perfect Copycat Version

  • Use rotisserie chicken to save time and add extra flavor.

  • Don’t overcook the gnocchi — it cooks fast in the hot soup.

  • Spinach adds color and nutrition but is optional.

  • For a lighter version, swap half the cream for milk.
